Cupcake Ice Cream Cones
I can’t think of a better “2-in-1” treat than this! These Cupcake Ice Cream Cones are so easy and quick to make. What’s great is that they can be a fun casual snack for the kids, or a fancy dessert at a party. The basic recipe is the same, and the decorating makes all the difference. This is also a great activity for a birthday party – something a little different than the classic cake decorating.
What you’ll need: muffin tin, flat bottomed ice cream cones, brownie batter, toppings (icing, sprinkles, etc). Yes, that is IT.
First, place each ice cream cone into one of the would-be muffin spots. With a spoon or small ice cream scoop, fill each cone about ¾ of the way full with brownie batter (leaving about an inch at the top for the batter to rise). Bake like you would bake a regular batch of muffins – about 20-25 minutes at 350.
When they are ready take out of over and let them cool before decorating.
Some TIPS:
-You can substitute the brownie batter with any other cake like batter you want.
-To secure the cones in place while baking you can try this. Before placing the cones into the muffin pan, cover the pan with a sheet of tin foil. Above each spot where the muffins would go, make a small slit with scissors or a knife. Push open the slit a bit as you slip the bottom of the cone inside. The cone doesn’t have to be centered perfectly because the foil will stabilize it.
