I don’t know about you but I absolutely LOVE watermelon! My obsession started many years ago when my family used to rent a place on Cape Cod for a few weeks during summer vacation. The houses we rented were always near the beach which meant instead of yard being grass and plants it was all sand. A few stray weeds would grow and pine trees but that was about it. One summer the house we rented had a deck in the back and after dinner we would munch on watermelon; my brothers and I seeing who could spit the seeds the farthest all the while watermelon juice was dripping down our chins. I have no clue who won but it was fun.
Then one day long after we had left our little escape of Cape Cod we received a phone call. The woman we had rented the house from wanted to know what we had done to her yard. My mother tried to explain we hadn’t done anything and were sorry about whatever damage she might have found but the lady interrupted and asked “how did you get vines to grow in the sand? I have been trying to get any kind of plant to grow for the past 2 decades” at that my mother laughed and told her of our watermelon seed spitting competition.
Watermelon soup
5 cups watermelon seeded and cubed
¼ c lemon juice
3 Tablespoons fresh mint chopped
1 Tablespoon fresh ginger
1 Tablespoon honey
2 cups mango peeled and diced
Puree 3 ½ cups of the watermelon and 1 cup of mango
Dice the rest of the melon and mango and add the diced pieces to the pureed mixture
Add in the rest of the ingredients stir well and refrigerate
