While it’s a few degrees warmer around the world, we’re still very much feeling that need to hot chocolate. I think you agree with me.

Let’s back up a sec. How many of you grew up on mandelbread? Or mandelbrot, or kamishbrot – depends where in Europe your blood is from. Or, if you’re super American, you just call it biscotti. Honestly, it’s more or less all the same thing. Delicious, crunchy, softens with hot drink, addictive.. get it?

What’s fun about this recipe is that you can really play around with the additives here. And even topping if you want to be super fancy and attract crowds (that will demand more. and more.). Like just drizzle some melted chocolate on top, some glaze, or powdered sugar.

Edmonton Mandel Bread

3 eggs

1 cup sugar

1 cup oil

3 cup flour

1 ½ tsp baking p.

¼ tsp salt

1 tsp cinnamon

½ cup slivered almonds

½ cup chopped walnuts

½ cup coconut

½ cup choc. Chips

Preheat oven to 350f.

Mix eggs sugar and oil by hand (don’t use a mixer here).

Add remaining ingredients. Mix well.

Divide into 4 portions, form each portion into a roll (log shaped) and bake 45 minutes.

Let them cool. Once cooled slice into stick shapes and place on the cookie sheet. Place in the oven at 200 for an additional 20 minutes. The longer you leave them in, the crunchier they’ll be.
